These systems can be a real bugger to bleed out the air. If you have an air pocket, it will react as you describe. There should be a bleeder valve near the thermostat housing that you can open and bleed just as you would a brake system. Always have the heater on when bleeding, also. Sometimes, it is benficial to raise the front of the car so any air bubbles will work forward, to the radiator. If you are absolutely certain that all of the air is out of the system ( a warm heater is a good sign), then should check for a head gasket leak. This can be done very easily with an exhaust analyzer (any shop that does emission work will have one) or with a chemical called Block-Check which is available at most parts stores.
