Problem with 2002 VW Bug~~help!

Hello!
I have a 2002 VW Bug. As I was driving the other day, this red light flashed and beeped after about 15 minutes of driving. My mom had told me that if that light ever went red, it meant that the engine was over heating. So when I got home, I dropped my car off at an autobody shop.
They had the car for four days and found nothing wrong with the engine. In fact, the red light never flashed for them. But they still topped off my coolant and whatnot, and sent me on my way. After about 15 minutes of driving, the red light beeps and flashes again, and the check engine light goes off.
My dad thinks maybe something is wrong with a censor or wiring, but we don't know what's going on. Any help would be greatly appreciated.

I'm not going to be of much help, as we don't work on any Euro vehicles. Can you tell us what the red light says or describe the symbol? If it's a symbol, does it look like an engine, a thermometer, a battery, ect?
