Is there anything wrong with only jacking up one side of the vehicle (i.e. left driver side) and letting the right passenger side of the vehicle remain on the ground?

You can do that without a problem using the right jacking spots. It won't hurt the car and of course only lift to what you need -- rolling the car over would be too much excitement for most.

That's done all the time for rotating tires. Alway watch out for opening doors when car is jacked up as the body does torque some,
