99 Nissan Altima radiator replaced now car temperature gauge problem

My 99 Nissan altima radiator was replaced due to leaking. I drove the car home and noticed that the temperature gauge jumped to cold every time I pressed on the gas. Mechanic changed the water sensor, left the shop and turned right back around because I noticed now the temperature gauge jump up to hot in less than 2 miles. Mechanic changed the thermostat and thermo sensors, still has the problem. Please help he is trying to say it had noting to do with him replacing my radiator.
