So my girlfriend and I own a 98 Camry LE (4 cylinder). It has about 183K on it. Anyways this morning she was driving to work on the freeway and she said that she turned the wheel slightly to the right and and it wasn't really responding. So then she turned it a little to the left and it jerked really hard to the right and then back to the left?

I'm guessing it has something to do with the power steering but I'm really not sure Confused .

She's on the verge of just selling the car and getting a new one but I told her we should get it running well before we sell it to get the most for it. I was wondering if anyone has any idea what this could be and about how much it's going to cost to fix it? .. Thank you very much in advance, I appreciate any and all responses.

I'd recommend having the steering components inspected, immediately. Not something to 'just sit back and think about'. It could be something very inexpensive and/or easy to fix, if you get it done before she ends up in a ditch.
Or the hospital. I don't mean to be sarcastic, but steering and brakes are quite important; Nothing to skimp about.

I totally agree.. we're in the process right now of looking for a mechanic in the area.. We're going to be getting a new car regardless, we just want to get this fixed so we can sell this one first.

Are there any fluids for the power steering that might be low or anything that might be causing it to function like this?

low power steering fluid wouldnt do the symptoms you described, the only shot is maybe you have a leak in the system and the power steering is sucking in air pockets???

i would have all your front suspension (ball joints, struts, sway bar links) and steering componants inspected

The first thing that comes to mind would be the rack and pinion, but as dmac stated, could be any number of steering components.
