710 cylinder repair

I am trying to replaice the cylinder head on a 1977 datsun 710. How clean and smooth does the engine block surface need to be?

It needs to be free of any lumps and bumps from old gasket material or burned on oils etc. If an alloy go easy with gasket scrapers - they sell spray gasket remover that helps a lot. Check with a real straight edge that it is true and the head also or it won't work,
