2008 Ford Focus - Car Overheating - Replaced Thermostat

I have a 2008 Ford Focus SE 2.0 that is overheating sometimes when you push it too hard or run the AC and then drive it on the highway. It only overheats when you push it and only sometimes. Sometimes the gauge will go over the middle and then it will cool and come back down and other times it will keep going and overheat. I will stop it before it overheats of course. I tried replacing the thermostat which didn't do anything. I checked the fluid and the radiator is full and the fluid looks good. The belt on the water pump looks solid and rather new. No slippage. So I can't figure out if it's the water pump going bad or a sensor or something else. After driving it for over a half hour, I noticed the radiator cap is not hot at all. I don't know if this is normal for this car. The fan on the radiator kicks in and works properly as well. I am guessing from my limited mechanical knowledge it can be a failing water pump or a computer sensor not reading the proper temperature? I know the thermostat doesn't have a computer sensor on this model. I also don't see any leaks or any fluid dripping. Can someone help give some suggestions as to what it might be? Thank you in advance.

Ok, sounds good. The only reason I know the thermostat has a sensor option because when I bought the thermostat, there was an option with or without sensor for some reason. I personally am guessing it's the radiator but I do agree. I am going to bring it into a mechanic so I don't ruin the engine. I am just trying to narrow it down so I don't get ripped off. I live in Los Angeles so that's pretty common. The last mechanic tried ripping me off telling me it took him 3 hours to replace the thermostat a couple years ago and I can do it in 30 minutes. I will bring it in. I am just trying to get an idea of what it could be.
