chevy engine overheats

1988 camaro 305/5liter v8 88000miles .engine overheats mostly uphills & under hard acceleration ,on flats & traffic heat gauge sits at quarter mark, but when i accelerate hard & uphills the needle climbs all the to top so i have to lean of the pedal & it comes down fairly quickly.had new thermostat in but taken it of for she runs better.the car stood in garage for three years( in closed garage). before i bought it .fitted a new feul pump & ran for a year still heating & it smoked in start up , so i had the complete motor overhauled & had branches & free flow exhaust installed.the following had been done & spent a small fortune. all brand new parts >bigger radiator,water pump,stainless steel & rubber water pipes,newtemp. sensors,oil cooler outside of radiator,air con & heater disconnected,cylinder head reskimmed with new gaskets & tested - all good ,3liters excellent coolant from silverton poured in,thermostat housing new ,cap new,engine timeing correct ,fan working with manuel switch & blades in very good condition & spinning the correct way, i have noticed the exhaust leaks both sides of neck of branches(where 4 pipes come into one) & slight white deposits under radiator cap.i have taken this car to the best in SA. but still no joy except my pocket gets lower.theres got to be a genius out there somewhere .please help.thanks ohh not losing water.

This fan with a manual switch: Is the assembly OE or something else? This smack of poor fan power as you said it happens under loads, T
