Take a fuel pressure reading new pump or not. Did you replace the filter, any wiring, gauge, screen in tank or just the pump?

Tom's right,
You need to follow what the fuel pressure is doing and when. That will help you isolate what's causing it once you confirm the pressure is fluctuating.

Check for injector pulse and crank signal during the no-start condition.

He said it would restart with starting fluid so that indicates it has a reference signal for spark. It could be losing injecter pulse but I think fuel pressure is probably more likely since the starting fluid didn't do anything to influence the injecter pulse to keep the engine running after.
