Is it really the sensor or the wiring going to it? Check sensor with an OHM meter that you thing has failed, bet it hasn't,

Engine size? What do you mean going out? On a date or to lunch?

Is this causing the check engine light to come on? If so, what is the trouble code number(s)?

when i say going out, The hot/cold guage on the dash goes to cold and the condensing unit fans kick on and wont turn of but no check engine light, then i would replace the sensor and all would be good for a day or so then the check engine light would come on and all would go haywire again.

check for codes - yes even if the CEL is off. Its free easy fast- most auto part stores do as a customer service...FREE.

the fans running sounds like a default due to no ECT signal and the expected code.
