For a while now, mums car has been having some issues.

-Poor fuel economy
-Rough idle
-Turns off whilst slowing down to a stop sometimes

We took it to a mechanic who ran a Diagnostics and he told us that the O2 sensors are failing. The post-cat O2 sensor is pretty much dead, and the pre-cat sensor is working, but not as good as it should.

I went ahead and ordered both sensors, and replaced the post-cat today.

I read a on a few forums that driving it around for 15-30mins to let the ECU readjust the sensor to perform accordingly.

However, after driving it for >30 mins, it has gotten worse.

The rough idle stayed the same, but the turning off whilst approaching a stop became more frequent.

I am yet to install the pre-cat O2 sensor, but I need some help getting to it and running the cable behind the heat shields properly.

The only other thing I can think of is faulty/dirty MAF which I'm planning to try and give it a clean with an MAF cleaner first, before ordering a new one (hopefully I wont have to)

Any other suggestions?

Not in that club. Driving it around is not going to repair a really/truly bad O2 sensor but can help to burn junk out of a converter. You've had the hands on diagnostics done that condemned it so when you get it put it in ASAP. Pre-cat O2 sensor can make a vehicle run lousy and the longer it is allowed to run lousy the more you are risking destroying the converter,

TRhe downstream sensor has absolutely no control over fuel mixture. It's a Cat monitor only.
