First make sure you have good clean connections at the battery and the starter. If you do and the wire is also in good shape you are likely getting heat soak in your starter. There are several types of shields or wraps out there to help this.

This one is from Mr.Gasket and Summit Racing sells it for $23. You can also find ones that are an aluminized wrap that you zip tie on the starter.

Your coolant sensor isn't going to stop this from cranking over. When you checked the battery connections did you actually unbolt them and work them out of the rubber housing? These side post terminals are awful at holding in corrosion without letter you see it. Have you had the battery tested on a load tester to be sure it is capable at all times of delivering power? A marginal battery won't like being hot anymore that being very cold. Do you have a multimeter?

When it won't turn over, see if you have power to the small trigger wire of the starter solenoid. If you do, then you need to do a voltage drop test on the power and ground side. If it passes that then you likely do have a bad starter.
