I have a 2003 kawasaki ninja 250. I am a newb to bikes. I unknowingly overfilled my oil by about 1 1/2 to 2 quarts. I went for a cruise the other day and my after around 30 minutes of riding my bike started vibrating like crazy, overheated and shut down. I noticed a very small amount of white smoke as well. My coolant which was full when i left was also completely empty. I have since changed the oil and filter, replaced the plugs, replaced the air filter and re-filled my coolant. Bike will now semi start but then dies. Also, the entire bike stills vibrates considerably. What should i check next or what should be my next step?

Bad news my man. You can do a compression test to see if the rings are wiped out but I'd bet you have bearing damage. When an engine is overfilled with oil, all the moving parts churn it up and aerate it, making a foamy mess. Think of it like taking beaters to heavy whipping cream. The bike barely holds much over the amount you had overfilled it so it was way up there. The engine had to strain extra hard to move its parts through the oil and got hot, either cracking the head or damaging the head gasket. Thats why the coolant was gone. This bike needs to be torn down to see which internals need replacing. If you aren't very familiar with these engines and don't have the special tools to work on them you'll need to find someone who does to get the bike working again.
