Hello! First post.
I have a 2000 Toyota MR2 Spyder with ~70k miles on the current engine, 200k+ on the chassis and transmission.
It is a 5-speed manual that has recently had a new clutch installed.
This car lived in Florida its whole life until a few months ago, and had never experienced below-freezing temps before. On the first freezing day my clutch pedal became harder to push and would return slowly, though I could still shift fine.
Within several days the pedal's travel was halved, and I had a lot of trouble changing gears even with the pedal fully pressed, grinding into Reverse a couple times and needing to apply a lot of pressure into any forward gear to get it to slot in.
The car sits now with a fully recessed pedal, stuck in 2nd. It could probably shift back into Neutral, but with no parking brake I'd rather not try.
The hydraulic fluid level is also on full.
Any suggestions would be greatly appreciated.
I'm a novice when it comes to actually wrenching, but I can understand mechanical concepts if explained to me.

When was the fluid last flushed out and replaced?

Within my time of ownership, never.

That's probably the first thing I would do. Get it into a warm area first. The pedal should come back when melted.
Brake fluid is what they call "hydroscopic". That means it absorbs moisture like a magnet, sometimes right through the hose. This moisture can freeze.
You could also have an internally ruptured flex hose if it has one.

? How cold was it exposed to? Was 2F here just recently, everything liquid that stays liquid is thicker. That should subside quickly when driven just a couple miles if more fluid is to blame.
Any hydraulic clutch LINKAGE will do this. So do brakes feel a bit different also goes away but not if cold enough for long enough. Sorry I live this so doesn't come to mind much am totally used to it. ZERO standard shift cars/regular trucks known anywhere around me too annoying in traffic a real good reason or just lazy plus several younger folks MA rule can't drive one without being re-licensed that they are capable!

As I was driving the last day before parking her, the car had been running for about an hour. The problem only got worse since I first turned it on.
It was the fourth or fifth sub-0*C day, or 31*F.

That's a chilly breeze where I am NOT cold to change properties of fluids quite yet.
Get that DOT 3 changed as HT said first post. It's not right and need help or read up on how to bleed or vacuum bleed out clutches. Air doesn't do that symptom lousy fluid can or does IMO only. End that guess with removing it for proper DOT 3, see if DOT 4 is possible (more range) but not DOT 5 as that's on it's own - OK?
Note: If that was contaminated with other than an approved fluid for brakes and clutches this changes the whole picture and fix for this problem you shouldn't have at those temps,
