I was told the coolant levels were ok and that the thermostat needs to be replaced because the hose was hard. How important is it to change this thermostat. Also if the hose was hard what does this mean? why would I just not replace the hose instead of the thermostat.
More Info:
The Check engine light is not on in the car. I just went to Pennzoil open my hood, and the guy touch the hose and said it is hard to squeeze ( I had been driving for about 30 minutes) and I need to replace the thermostat ( although I did not get a warning in the message center of my car) I have a 2001 Impala. I was also told my coolant levels were OK and did not need to be change the coolant also when driving my car does not overheat, the radiator gauge in my car stays between 140 and 180 while driving. My car has 137K miles and runs great. I just don’t want a mechanic shop making me pay for stuff I Don’t need. Also I have no leaks from the hose at all.

The engine should be running hotter than 140-180. The thermostat in those are rated for 195 F. If the engine runs too cold, it will use more fuel, pollute more, and wear out faster. If the engine coolant temperature isn't high enough, some of the OBD2 monitors won't ready.

Hoses that are hard and crunchy need to be replaced. If those are the original hoses, probably due for replacement.

I certainly hope you have someone beside this guy look at your car. Although you could need a thermostat for the reasons DS gave you, the above reason is ridiculous.
