I know that when replacing any sensor or part that has current through it , it's preferred that you disconnect battery cable first. Question is does it matter which cable?? Positive or negative?

Negative, if you try to take positive off with negative on you will be in for a shocking surprise.

Maybe if you are replacing something that is powered all the time and has exposed wires but sensors are not powered with the key off and they have no exposed live wire.
