97 VW Jetta GT 2.0L still need help!!!

Alright, I recently posted about this car a week or so ago its a 97 Jetta GT edition with 2.0L it has 190,170 miles total. My last post was asking about a stalling out issue I was having after car was driven for a good 10-15 miles and heated to normal running temp. It would do mostly when sitting at a stop light and it wouldn't just die out sitting still it's when I give it throttle and start coming off the clutch. Most times the car cuts out like it has bad gas or it needs a tune up and then it stalls out so i turn it over and it misses 2-3 times but will fire right after. Well I've done a full tune up with high grade parts from the plugs to dist. cap & rotor, as well as oil change and I actually replaced the stock air system with a cold air intake because of the gutless throttle response i was getting it was falling flat on it's face when i would put throttle on the floor. Yes i know its a 2.Slow but when you can tell a huge improvement in power from the added cold air intake, something was definitely wrong with stock air system because I don't care what cold air system you put onto this size engine it doesn't just increase the power as much as this. I figured all of this would fix the problem i was having stalling out but it didn't its still wanting to fall on it's face taking off from a dead stop. It doesn't do it every time you stop it didn't before but every other time you stop it decides to do it. Now something I've noticed is that when I come to a stop if i keep foot on throttle slightly and don't let RPM's go below 2000-2200 RPM and I jump the clutch or slightly ride it which i know neither is the smartest thing to do but when this is done it takes off like normal if riding clutch or balls to the wall if I jump the clutch, but let those RPM's drop below 2 grand get ready for it to die once you try coming off that clutch. The only two things that I haven't changed is fuel filter and plug wires they are relatively new so I didn't replace. All vacuum lines/hoses all seem to be hooked up and working properly and there is no check engine light and I've hooked my snap on solus pro up to it and nothing. Also when I first start the car up and its cold it will run like a scolded dog but the more it warms up the worse it runs throttle response wise. Also 1st-4th gear is not to bad but shift into 5th gear at say 65-70 mph and mash the throttle and it will jump like cutting out pretty much like starting off in 2nd gear with just enough throttle to allow the car not to die but not enough to continue to push the car up in speed. As soon as I drop it back down into 4th from 5th it will run like a champ again. I grew up working on mainly Chevy's and Ford's so I'm new to the whole Volkswagen scene so I'm confused on where in the world to even start to fix this issue its starting to become irritating like one minute it wants to run like a champ and the next its like its starving for fuel or something. Sorry for such a long post but I didn't have a shorter way to explain what all is going on with this car. There is one thing that needs to be done and done soon and that is rear main seal replacement, not sure if this is causing problems or not, I know it could possibly coat the clutch, and I end up pouring 1/2 qt or so of oil in every 2-3 days. Its not something I'm trying to just put off I've just got to make time to pull trans and drop the oil pan and replace it but it will replaced asap. Once again any advice is greatly appreciated because I'm LOST please help Y'all........:confused:
