2010 ford escape please help solve mystery

2010 ford escape engine running hot like in the red hot but usually goes right back down to normal while breaking now heater inside blows freezing cold air but after driven at least 30 miles it starts blowing warm air but fir the most part it never will.. it's worse in mornings when cold outside if I drive on afternoon it may act perfectly normal no over heating nothing for couple days then it's doing same again I've replaced thermostat and housing this had been going on for months but last few weeks it is running low on water several times a day but then great fior a week I have searched and see not bad hoses or leaks I just don't get it she had bipolar please help Noone seems to figure it out

The no heat issue is likely air in the system. The big problem is why. Since you have been driving this way for a while now, you likely have a blown head gasket at this point. That is pumping hot exhaust gasses into the cooling system.
It only takes one good overheating to do permanent damage to the engine.

That was my thoughts, with an engine that's running low on coolant with no obvious leaks. 1st thing to do would be to check for exhaust gases in the cooling system

There is likely also a coolant leak somewhere that started the whole problem. That would have to be found after the head gasket issue is resolved.

Quit driving it you're going to blow this engine. Air, vapor of boiling even if this self purges cooling down could suck in air thru a leak. It probably can't hold pressure now would prove that thought.

What do you want to do it trouble now IDK if you can save it oil would be like shellac from the heat and show it,
