92 Dakota 3.9 engine noise after throttle release(video)

So first off I broke an exhaust manifold bolt that I tried to snug up with a new nut... So that's why it might be louder than it should. I'm trying to make sure she's worth keeping before I put any more money into her.

What I'm curious about is the grindy "ca-chunk" sound it makes after each time I take my foot off the gas. It is coming from the drivers side where the broken bolt was so is it the exhaust manifold still? Bad valve hitting? Distributor index off? It did pass a compression test.

Brief history was she was run bone dry of oil(air intake hose melted half way) and started having problems. Through reading online decided to look at the intake manifold gasket which looked liked it failed on the front side, and then decided, while in this far and for learning purposes(not the end of the world if we have to shoot her behind the barn) to open the cylinders up but the head gaskets looked very much intact. I put her back together and used a multimeter to set the distrubutor, which I know is not optimal bust still just seeing if she is worth saving.

The only other thing I know needs addressing is the single blade sensor behind the alternator and top water hose which sounds like its the coolant temp sensor for the dash cluster? The sensor it plugs into is beyond corroded now for it to fit in properly. I don't believe that sensor would cause much issue though? The vehicle has been slowly worked on for the last year so has been off the road as long with less than optimal gas in it I'm sure.

If anyone can help me identify what that sound is, that would be great. Also if anyone wants to flame/berate me for any poor conclusions or stupid decisions I made along the way I'll appreciate your mean wisdom.

Update:
So I just removed the exhaust manifold on the trouble side to get it ready for new bolts and wanted to see if the noise would disappear. I ran it for 10 seconds and after hitting the throttle again the same "ca-chunk" sound was there, although obviously a bit louder this time.

This would rule out anything with the header right? Or I know gassers require back pressure in the exhaust, so is it anyway related to that? With it being loose before and now right open?
