Do you leave it with your key or not?

Should you lock the doors with it before you leave?

I know that if you don't set it off sometimes the dome light will stay on and drain your battery

But I don't know if there will be any problem with the mechanic just opening the door with the key and starting it up (chip key)

Leave the remote and the key with them. You can lock the doors because they will have the remote and key.

They can use the key to unlock the car and start it since it has a chip, I'm just wondering if it can do damage not to give them the remote.

I normally don't when i get my oil changed either.

Honestly I doubt if they would set it locked when they are done.

If you expect the guy to work on your car, then leave him what he needs. If he happens to disconnect the battery, he could reset an alarm system. There's no reason to play games with him about the remote.
