Ford has never made a 4.1 engine. What type of van exactly is this? Get the exact engine for us to get exact advice please.

Ford senders of this vintage were known for poor readings clear back in the 90's. Dash gauges in these are going to need to be verified. Get a master gauge in place of the oil pressure sender to see actual oil pressure and use an infrared pyro to see actual water jacket temps. I you want, install mechanical gauge pods for cheap that show you actuals. AutoMeter makes a good set showing oil pressure, water temp and battery voltage in a 3 pack for cheap at summitracing.com.

The basic thing is that you can't totally trust these gauges unless verified to read right. If you are actually running hot still after all those parts already changed, you need to know you haven't been just chasing ghosts in a bad gauge.

Did this happen simultaneously?
I assume you are saying the oil gauge went all the way high, not low.
