Noisy acceleration issue

I have just had the differential oil on my 2002 Toyota RAV4 VVT (2litre engine) changed because of the humming noise it was making when I accelerated, the original oil was clean since the oil change the car still makes the noise. Any thoughts on what I should look at next? It has 115,000 miles on the clock, is regularly serviced and has never had any problems before.

Why would you expect an oil change to fix your mechanical problem?
You need to have it diagnosed properly to find out if it's gear noise or bearing noise and which ones.

Questions then a maybe: Was is low to begin with as in leaking anywhere sometimes only seen inside of a tire? Any recent work on it at all or incident to aggravate it?
With that I think most (could be a few types used) would be a removable carrier style and if so a replaceable bearing(s) right at housing where driveshaft goes in. It's fits that description you gave. Why if you didn't do anything? Who knows? If like last ones the bearings don't crunch up but show pits and doesn't take much to make noise so could leave gear oil looking good.
If sure it's the differential you may do best to seek out a transmission type shop that takes on differentials as well. Some can have specs and tools needed that could easily exceed a straight forward fix if so. Let them diagnose it!

I have had two of the bearings changed and will have the others done to be on the safe side, the mechanic found it hard to diagnose based on my description and couldn't really hear the noise himself but said I would be 'tuned in' to the car. Vehicle was put on a ramp, but without load, no noise! The oil in the diff has never been changed so I thought it was worth a shot, car runs great just noisy.

Are all the tires the same size? Does it only make this humming noise when your accelerating?

! You've already done bearings on this thing? Why? New doesn't mean better ever. Good origs can outlast many replacements.
Have you dunked this Rav4 under water or water over center of wheels for any reason, flood or just drove thru? They can't take that and it hits bearing and brakes hardest if so.
Going nuts. If you had this with a tech and said it did it on acceleration then why was it tested still on a lift? Tons of things aren't going to make the sounds or symptoms without the load on it as you suggest is when it happens,
