I'm Stumped Over Grinding Noise

I have a 2001 Hyundai Santa Fe GLS AWD 2.7L with around 115k miles. I started hearing a grinding noise with a whap whap kind of sound along with it. The noise seems to start around 20 mph and gets louder as you accelerate. I associated the noise as being wheel bearings going bad. It seemed to me that the noise was coming from the rear of the car. So I had both rear wheel bearings replaced. The mechanic who did the work stated that the wheel bearings were in fact bad. I drove the car for about 2 days without any noise. After two days, I started hearing the noise again and it got gradually worse. This time it seemed like it was coming from the front of the car. I also noticed that if you turned the steering wheel slightly to the right. The noise wouldn't be quiet as loud. Also whenever the car would hit a dip the loudness of the noise would change with the weight transfer from front to rear. So I though well the front wheel bearings are also bad. Had them replaced. Mechanic says yep they were bad. Get the car back noise is gone again. My wife has driven the car too so she knows the noises its been making. She took the car out of town this weekend. Drove 60 miles with no problems. She did say that it seemed like there was more road noise towards the end of her trip but I just wrote that off as possibly being the road itself. Next day she gets in the car to drive it and the noise is back and she says that it's just as loud as it was before. I don't understand why the noise would temporarily go away and then come back on both occasions. I did ask on the rear bearings but not the front if the hub assembly were still ok and the mechanic said when asked that the rear ones still looked good. I figured if the front ones looked bad he would have said so. I'm stumped now. Where should I look next? Rear Diff, axle bearings, transfer case. Any ideas and help would be appreciated.

They may be over torquing the the rear bearing nuts.

Leefers: ? Weird - noise goes away but does it come back EXACTLY as before the bearings? Not sure on this but would think even ruined new bearings for any reason would be a different sound and symptoms. With marginal but bad bearings when I have them OFF you can feel (in hands) that they are bad and be real sure better than while still installed.
Something's wrong here. If back ones solved the noise and came back then fronts solved the noise and came back why didn't the back ones still make noise? This doesn't all add up yet to me I'm guessing these are sealed hub bearings with a splined shaft to threaded nut. Tech should know with old one(s) in hand as I said that it's really bad or not.
IDK - this may be misdiagnosed but I don't know why it would go away for some time?
Watching to see what happens with this,

Sorry Tom. I don't know a lot about hub bearings or what different types their may be. I just know that the bearings press into the hub assembly.   I agree with you. I cant for the life of me figure out why the noise would go away and then come back.
*Update* My wife just got back from out of town. She said that the noise never completely went away after the front bearings were replaced but it wasn't as loud. ?????? Then the next day it was as loud as it had been before the repair. When I get it figured out. I will definitely let you know what it was.

OK - even if this isn't going well it makes more sense now. Just looked up the bearings and appears fronts are all the pressed in type and rear could be hubs or pressed??
They look like this if it shows..........
And rears would look similar or could be the whole hub which has the studs for lug nuts common to many types out there now like this........
That type is harder to screw up. If over pressed for a pressed in one that won't get better - I say they are ruined if so.
